Food waste has become a challenge for society. In collaboration with Kitro, a successful tech startup, this project used mixed methods to address 3 areas: the student, the consumer, and professional perspective on food waste. Specifically,
- Evaluate the potential of several food waste prevention practices for curbing the food waste challenge on the longer-term after Covid-19.
- Identify educational and sustainability solutions for enhancing hospitality and culinary students awareness.
- Assess best management practices for minimizing food waste in fine dining.
- Assess technological solutions on waste quantification and their impact on fostering user awareness and engagement.
